Cooking from the garden and freezer

I’m posting at about cooking with what is on hand this time of year.  Read more about it at Women Not Dabbling in Normal.


I like admiring snow from afar, Mt Hood looks good with it’s winter blanket.
Sorry to be enjoying this weather, I know many of you are experiencing the cold. :(

    Perfect post this time of year. It can definitely get a bit monotonous with all the root veg and not quite being ready to hit the storage items in the freezer or canned.
    The view looks so tempting, almost like it can be a beautiful warm day. I’ve got the problem outside my office window – the clear sky, the clouds, but yet, when I step outside the bone-chilling cold. Not quite fair of the weather, to be so tricky like that with the mind, huh?

    I love cooking from the freezer & pantry. Whenever we use all pantry ingredients I always tell Mr Chiots the meal was FREE (not really but it’s fun).

    That’s the first time I’ve ever seen Mt. Hood. What a beautiful view you have :)

    Enjoyed your post over at Women not Dabbling in Normal. I would love to sit right down and have a piece of that beef pie! My family doesn’t eat it but it’s one of my favorites.

    My biggest difficulty eating from pantry and freezer is picky eaters. It seems I always need someting from the grocery store in order to cook something that everyone will eat. I try to cook a variety of food but when you have freezers full of meat and veggies, it would seem like that what’s for dinner! It’s gotten better over the years but it does make cooking a challenge.

    Hi! I just read your comment on the pressure cooking post over at Simple, Green, Frugal. My mom and I have (matching) Mirro-Matic 12 qt. canners from either the 50′s or 60′s. (I have my Grandma’s and she has my Great Aunt’s.) They have seen heavy duty canning action every year since they were purchased, but none of us have ever done much cooking with them. (Well, for one thing, they’re pretty huge. :) ) I think my Mom might have done some roasts or something in them, but me, only some garbanzo beans. I have the little booklet…is yours yellow and “white” (maybe white once upon a time). Any good recipes to recommend? Jen.

    P.S. I used your noodle recipe from December for both lasagne and for chicken noodle soup (tonight) and the results were fabulous! Thanks!

    MC, winter eating and cooking can get monotonous, but the view does look inviting. However, it is cold, although not that cold. If we stay out of the wind it isn’t too bad, but you have to be working to stay warm.

    Susy, it does seem free, doesn’t it? I know it isn’t, but kind of like childbirth, you forget and do it all again.

    Deb, we can’t see all of the mountain, around here the rule of thumb is if you can see the whole mountain you are in the windy area (60 mph yesterday) :) Brrrr. Luckily we are out of the wind. You used to be able to see Mt St Helens too. But you know the story on that one!

    Oh yes, the picky eaters – I have one extreme to the other. Hubby is fussy, and kid will eat anything. Sometimes it is just easier to fix something for him and make something else for us. It is challenging trying to come up with something to fix sometimes.

    Jen, my book is blue and with a picture of the pressure cooker on the front. I think the pot roast and salisbury steak type recipes are the best. That pressure cooker has the jiggling weight and I remember having to sneak through the house so as not to make it jiggle more often, just like “don’t make the cake fall!” Things mothers say, that often get repeated when children become mothers… . I have to say my favorite thing is beef neck roast prepared for mince meat, it’s hard to leave the meat for the recipe it is so good!

    Hey thanks on the noodle compliment, it is so easy to make those noodles, after I learned how, I couldn’t believe I had been apprenhensive to try.

    Chris, are you freezing your *** off? It is pretty comfy here during the day. Freezing at night, and sunny during the day!
    We are kinda spoiled with the snow capped mountains around here, in Ptown on a clear day, you can see 3 large snow capped volcanos. All the humps around town are just dormant baby volcanos. Pretty amazing.

    What a beautiful photo. Despite having friends in the Portland area, and visiting there numerous times, I’ve never seen Mt Hood – it’s always been shrouded in the clouds.

    Thanks, I’ll check to see if I have something similar in my book. I know what you mean about the jiggling weight and the warning to tiptoe so as not to make it jiggle too much! :) Jen.
